Biography
I have been a cookery teacher for 15 years and a specialist BBQ teacher for 10 years. Crossing the BBQ world from East to West, my specialities range from Cantonese BBQ of glossy roasted ducks and char siu to deep smoky American style pork ribs and peppery beef. I also teach sausage making, charcuterie and various Asian cuisines. Through my experiences in Asia I have a deep understanding and appreciation of the special connections that food provide to so many people. I am just as comfortable teaching you to how pleat delicate dim sum dumplings as I am butchering a whole pig for the bbq pit.
With my knowledge and experience I have many professional clients. Ranging from small BBQ restaurants locally in the UK to Asian businesses in Europe. I’ve developed meat dishes and sausages recipes for Marks & Spencer. I have also develop the launch menu for dumpling and noodle restaurant Petit Bao in Paris. Following through to training their chefs and factory production.
Throughout the years I have enjoyed many popups and supper clubs showcasing my eclectic style. From collaborating with Michelin starred chefs to Asian BBQ streetfood. You are guaranteed unique and delicious food cooked with generosity.
